When I discovered that Taco Bell served a crispy breakfast wrap, I knew I had to create my own copycat recipe.
Delicious sausage wrapped in a warm tortilla, soft eggs, lots of cheese and a crispy toasted crust.
Breakfast by hand. Whether you make this breakfast recipe or my classic crispy wrap recipe, the fillings are completely customizable. Use bacon instead of sausage, add hash browns or hot sauce – whatever you want!
Breakfast Crunch Wrap
Taco Bell’s Breakfast Crispy Roll features scrambled eggs, bacon or sausage, cheddar cheese, jalapeño sauce and a whole hash brown – all wrapped in a corn tostada tortilla. That means it’s not a breakfast crunch recipe

Use the tostada shell as a shape to cut small tortillas from half of the large tortillas.
Breakfast Crunchwrap Supreme
To make a crispy breakfast roll at home, gather the filling ingredients, fold each roll and bake in the oven until golden brown.
How to put together a crispy breakfast. Lay out the filling ingredients and start by folding one edge of the large flatbread. Press down on the folded side of the tortilla to flatten it, then fold it over to create “creases” that seal into the griddle. Continue until you are ready to assemble and bake each roll!
Place a small tortilla circle on top of the cheese, then fold the edges of the large tortilla over.

I’m a person who eats breakfast every day, but I go out for brunch on the weekends. I love a good spread of all my favorites, including the occasional mimosa. This wrap is perfect for when you have more time to make breakfast on the weekend and want a good meal.
Low temperature is your friend! I often see people end up with burnt and brown eggs, and this is usually because the eggs were cooked at too high a heat and temperature. Regardless of the type of stove you use, gas or electric, always keep the temperature low.
Breakfast Crunchwrap Sausage
When the eggs reach the desired consistency, turn off the heat completely. If you have an electric stove, you need to change the pan to another burner. If you leave it on a hot burner, the egg will continue to cook, causing the egg to burn.
Be sure to beat the eggs well before adding them to the pan. If it wasn’t in a crusty roll (which has cheese in it), I would add some shredded cheese when the eggs are scrambled. You can do it if you want!
You can use any potato you like, mashed potatoes or hash browns. I used Trader Joe’s frozen hashbrowns when I made this. I don’t use them regularly because they are cooked in vegetable oil. I fry them frozen for 9-10 minutes at 400 degrees, making sure they are crispy.
Cheesy Breakfast Crunchwrap With Creamy Jalapeño Sauce

The best pan to use is a cast iron skillet. You can always count on them to provide sharp edges for anything. A stainless steel pan can also be used. These are also great for baking. In general, you want a good pan.
A tip that will help you fry the roll is to put something heavy on the roll while it is baking in the pan. This allows the wrap to really stick to the surface and get really crispy. I usually put cast iron on the rolls because they tend to be heavy.
Vegan Breakfast Crunchwrap (vegan Taco Bell)
You can also air fry them if you want. You can bake them at 370 degrees for a total of 6 minutes. Turn halfway through in 3 minutes. You won’t save any extra time on air frying. For me, the roll is crispier when baked versus air fried.

The great thing about making your own sauce is that you can customize it to suit your needs. I like the spice level in the sauce to be more on the medium side. If you want something less spicy and milder, reduce the amount of jalapenos and cayenne pepper in the recipe. If you’re looking for something really sweet, add more sugar or sweetener.

Air frying does not save much time compared to pan frying. Baking the rolls in a cast iron skillet is my favorite method.
