I firmly believe that wine is grown, not made. Michelangelo said that “every stone has a sculpture inside, and the sculptor’s job is to discover it”. I believe a winemaker reveals wine the way a sculptor reveals a statue.

Most wineries in the United States are first-generation businesses. Few pioneers pass the torch to the next generation of winemakers. Those who figure out which grapes are best grown are the true pioneers. They experimented a lot and found that one or two grapes were best defined by their particular terroir. They focus on growing them as much as possible.

I used this spirit to grow new grapes in our home state of New Hampshire. We breathed new life into this 200+ year old farm. Grapes like Briana’s—complemented with granite soils and hot summers, but withstood the coldest winters—make beautiful wines. I believe this is one of the areas that defines grapes. We’re only just beginning to explore the different ways to make wine from this grape and others. So stay tuned…to see what we reveal next year.

Most of our wines are made from hybrid grapes. The hybrid grapes are bred from different parents and are selected for their ability to bear fruit during the extremely cold winters and then ripen in the short summers. Traditional “Vinifera” grapes (Chardonnay, Cabernet Sauvignon, etc.) do not survive or mature in New Hampshire. These hybrid grapes have completely different flavor profiles – adding new, interesting wines to pair with local foods. Those who grew up together will walk together.

Every grape has the potential to make great wine. We grow these grapes to the point where they are sometimes overripe. We work with other growers who also look directly at nature, waiting for the most opportune moment to harvest their grapes. Weather or disease stress can quickly destroy grapes. We keep an eye on the grapes and overcome these pressures to ensure a good wine harvest. Winemakers then extract the juice using old and new methods best suited to the grape variety and chemical composition at the time of harvest.
